chai tea cupcakes

A friend of ours is visiting from Vietnam after moving there from NYC about 6 months ago. Tonight we are having a group dinner with her at another friend's place. Of course, I volunteered to provide dessert and cupcakes were requested. I decided to try out a chai tea cupcake. Since I had a difficult time finding a recipe without "instant mix", I improvised and made up my own recipe from a basic vanilla cake recipe from Bill's Food.

chai tea cupcakes

  • 1/2 cup sugar
  • 2 oz butter, softened
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamon
  • pinch of salt
  • 1 or 2 chai tea bags

  1. Preheat oven to 350 degrees. Place liners into cupcake pan.
  2. Heat up milk on stove, remove from stove. Place tea bags into milk, cover and steep for 5-10 minutes.
  3. Cream sugar and butter together. Mix in egg and vanilla. Mix in milk.
  4. Sift flour, baking powder, cinnamon, ginger, cardamon, nutmeg, cloves and salt together. Mix dry and wet ingredients together.
  5. Divide batter into cupcake liners. Bake for 15-18 minutes or until a tester inserted comes out clean.
  6. Allow to cool before frosting with your favorite buttercream frosting. Sprinkle with cinnamon.

Instead of the buttercream, I found another recipe for honey and cinnamon cream cheese frosting that was very good, too.

Well, I'm off to have one for lunch. Thanks again!

  12. YUM!! I soaked the milk with a stick of cinnamon and 3 cardamom pods. So what I needed.
