green tea pressed cookies


I love making pressed cookies, actually I love making any type of cookie. These are customized pressed cookies by stamping them with a rubberstamp before baking them to decorate them without really decorating them (i.e. with icing, sprinkles, etc). It took me a while to find something I liked. Finally at Kate's Paperie, I found a stamp of a heart within two circles which was about the right size of a perfect cookie. In order to make this effective, I left out baking soda or any riser to the dough. Now that the weather is finally changing, I wanted to make a flavor to celebrate spring.

  • 1 cup butter 3/4 cup sugar 
  • 1 large egg yolk 
  • 1/3 cup sour cream 
  • 1 teaspoon vanilla 
  • 2 3/4 cup all-purpose flour 
  • 1 teaspoon matcha 
  • 1/2 teaspoon salt  
  1. Preheat oven to 375 F. Beat together butter and sugar until light and fluffy. Beat in egg yolk, sour cream and vanilla.
  2. Sift together flour, matcha, and salt. Gradually stir flour mixture into butter mixture.
  3. Fill cookie press with dough, then form circular cookies on ungreased cookie sheets. Lightly brush oil on rubber stamp, imprint onto pressed cookies. Reapply oil onto stamp after 3-4 cookies.
  4. Bake 10-12 minutes. Remove to wire racks to cool completely.
