banana bites


This is technically a banana muffin but it began as a banana cookie. My concoction of a batter turned out to be too wet to drop on a cookie sheet to make cookies, so instead I dropped them into little paper cups and made muffins. They were delicious! I'll try my best to remember the ingredients!

  • 2 cups of flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2  cup (1 stick) butter
  • 1 very very ripe banana, mashed
  • 2 tablespoons milk
  • 1 egg (room temperature) 
  • 1teaspoon vanilla
  • walnuts for decoration
  1. Preheat over to 350 degrees. Sift flour, baking soda, baking powder, and salt together, Set aside.
  2. Cream butter and sugars together in mixer. Add egg, milk, vanilla, and bananas. Mix until well blended.
  3. Add flour mixture and continue to mix.
  4. Spoon into paper cups. There is a lot of riser in this recipe, so only fill the cups halfway.
  5. Bake in oven for 5-7 minutes or until the batter starts to rise, place walnut in center.
  6. Finish baking for another 5-7 or until a tester comes out clean.
